Team Up Thursday - Cloudy With a Chance of......

What does that theme mean to you? My first thoughts turned to the sky and what kind of weather we might get (unfortunately, more SNOW is in the forecast tonight - ugghhh!).

Lee was thinking about the Movie, Cloudy with a Chance of Meatballs, so she sent me a picture of some yummy veggies. I didn't think they would match the sky photo I took in the morning, so I substituted some chocolate, going for an "opposites" feel to today's pairing.

[Normally I don't change the photo planned in the diptych, but I felt this pairing matched better and really, there's no right or wrong on how we approach creative venture, wacky themes and all!]

Making Crepes

I have been delinquent in several of my "cooking" themed posts - I took the pictures, but never created the actual posts.

So today, a little bit of catch up - our favorite "pancake" - crepes.

The recipe - (I have it memorized now)

3 Eggs
1 1/4 C Milk
1/4 C Melted Butter
Pinch of salt
1 C flour

Beat eggs together, add milk and melted butter. Mix in salt. Whisk in the flour. The batter will be thin.

The Batter

Heat up a skillet pan and when it is hot, add a thin layer of oil.

Pour about 1/4C of the batter on to the skillet, picking up the skillet and rotating it to spread the batter around the bottom of the pan in a thin layer.

Cook until the top of batter looks dry. Then flip the crepe over:

Yes, nice and golden on top. Wait until the steam stops coming out of the crepe, and it should be done.
The Edge

Serve with jelly, jam or even ricotta cheese mixed with the jam.

Or plain, with confectioner's sugar sprinkled on top. This is the way my daughter likes it.

Dumpling Time

Yes, I know - a week has passed since my last post.
We are super busy here - making things, running around, the usual stuff of life.

Last Sunday I spent most of the day making and cooking Chinese Dumplings:

This sort of thing only happens once a year, so we enjoyed the dumplings while they lasted.....

Wake Me Up

Hannah was napping on the makeshift couch in the kitchen that Scott sets up when the kids take over the family room TV.

Of course two minutes before this was taken, Scott was resting comfortably on the "couch" but got up to do something. You know what they say - you snooze, you lose. Or you move, you lose your spot.

Can you make out the "cat bokeh" in the background? That's Sam, the Siamese. This is the closest the two cats get to one another.

Scott and the kids have taken to setting up a “couch” in the kitchen, in order to enjoy the TV there. Line up all the chairs and wrap yourself with blankets. It’s like watching TV in bed.

304/365 - Save this Recipe!

Tuesdays are always busy at the house. I have violin lessons right after work. Erica has soccer practice. Brian has TaeKwonDo. Scott has church meetings every other week. But tonight, we have no practices, no meetings, just hanging out at home.

Because I've got the time (and nothing else ready to make for dinner), I opted for "Breakfast for Dinner" tonight. Breakfast for Dinner always sounds so easy - fry up some bacon, some sausage, sausage gravy, biscuits, potatoes, eggs, etc. So, why am I always exhausted afterward? Oh, well, we only do it once every 6 months or so and the food is always simple and good.

But today, we added a new recipe to our breakfast repertoire - crepes! Erica orders these at the local restaurant that "serves breakfast all day long" and has been asking for them. So she looked up a recipe on the Internet and set forth mixing up the batter. I managed to make 6 decent looking crepes. And they were delicious!

Erica and Brian prefer theirs plain with powdered sugar. I filled mine with ricotta cheese and jam. Oh, yummy! Sorry, no pictures of the crepes themselves, I was busy concentrating on making the crepes without mangling them.

But here is the recipe that Erica copied from the Internet and stuck on the fridge. I predict we will make more soon.

10.11.02 - Save This Recipe

Oh, you want the actual recipe, right?
3 eggs
1/4 cup melted butter
1 cup milk
1 cup flour
dash salt

Mix all the ingredients together. The batter will be thin - we used a whisk to make sure it was lump free.
Pour 1/4C or so out a thin layer on a greased griddle, a 6-9" inch circle (or oval, or general shape). I used a non-stick square griddle, but I greased it with some oil.
Once the top of the batter is dry, flip it over and cook on the other side until golden. Add filling as desired, fold and serve.

I can see I'll have to follow up with some pictures of the actual cooking. Because it really is easy to make these delicate, melt in your mouth morsels, and one shouldn't shy away from making them because it seems difficult!

303/365 - Penzeys Spices

My most recent Penzeys Spice order arrived today. None too soon, as I am out of Taco seasoning and Cinnamon (and that cinnamon is essential in my morning coffee).

Penzeys also sells their spices in glass jars, but since I already own the glass jars, I tend to order the bulk bags - they are a better deal with less waste - I simply refill my existing glass jars.

10.11.01 - Spicy and Sweet

I have been using Penzeys Spices for at least 10 years, and I won't buy the stuff in the grocery store anymore. My favorite spices / blends include:
Northwoods Seasoning - perfect for grilling chicken
Taco Seasoning - less salty than the brands you find in the supermarket
Greek Seasoning - garlic, oregano, lemon and pepper - used on chicken, veggies, also can use to make Greek salad dressing
Vietnamese Cinnamon - the strongest, sweetest you can buy.
Double Strength Vanilla - need I say more?
Garlic - when I'm too lazy to mince fresh, and great in Chinese sauces

OK, I could list more, but that would prove that I own a small fortune in spices.

But life is too short to be without a little spice right?

Team Up Thursday - Holiday Fun and the Reality of Re-entry

Two very disparate diptychs today - at opposite ends of the spectrum, really.

The Holiday Fun theme was planned for last week, but as I was still walking around in a haze, it didn't get done.

And this week's theme is "Re-entry", so aptly picked by Lee last week as I was explaining how difficult it was for me to reenter my normal life.

Mosaic Monday - Kitchen Duty

I broke out the Cuisinart food processor this afternoon for some heavy duty kitchen work. I only use it when I need to process large quantities of "stuff". Today's creations - hummus, baba ganoush and nutella. That Cuisinart motor was humming along, saving me a lot of manual work.

SOOC Saturday - Waiting to be Picked

From the farmer's market this morning. My first visit this season. And it was broiling hot. And crowded. Next time, I need to go earlier in the day.

One of the chores the kids endure - putting away the clean dishes out of the dishwasher. I often take care of the silverware, but today, Brian proved how organized he is.

A little bit of fun for today - the contents of the fridge.
I know it may seem odd to take a picture of this, but think about how food trends, appliances and even food storage quickly change. I bet in 10 years another snapshot of the fridge will reveal these changes.

On the top shelf - tonight's chicken noodle soup and spicy black bean soup in containers. On the lower shelves, you can see the wedge of watermelon (first of the season - it is quite good), strawberries, yogurt, milk, cherries and water. Just some of the highlights.

Sounds like a Native American Name ala Dances With Wolves, right?

But that's how she sits, all prim and proper, with her long tail wrapped around her front paws. Keeping them nice and warm, we say.

I took the picture after I caught Hannah sitting on one of the kitchen table chairs. She doesn't normally sit here, and I liked the light coming through the back patio door. Hanging off the chair is a pair of snow pants - indicative of the recent snow and outdoor play. That's why I like this picture over the others I shot today.

I took another shot of the bowl of chicken noodle soup we had for dinner, but I like this one better because of the kitty cat glass.

We bought the glass at the now-closed World Market - glasses with cats, dogs, frogs, cows, bunnies and other assorted animals imprinted on them. I know the kids will remember these glasses when they grow older [Just like I remember the daffodil plates we used when I was growing up].

325/365 - Expensive Mesh

I've wanted to replace these grease spatter screens for over a year now. They are installed on the microwave / vent hood that sit above the stove, and since I do my share of pan frying, wok-ing (is that a word?) and egg/bacon frying, well, they are quite plugged with oil.

Scott searched at the Home Depot (no dice) and finally found them on the internet a couple nights ago. $45 bucks for two flimsy mesh screens!!! Oh well, we'll suck it up, and maybe one day, I'll have a Viking stove with a heavy duty vent (no mamby-pamby microwave vent thingy).
